    Keto Bacon Cheeseburger Casserole


    Ingredients

    Metric - Cups/Ounces

    Beef Layer
    1.  1 onion quartered and sliced
    2.  1 clove garlic crushed
    3.  750 g ground/mince beef
    4.  60 g cream cheese full fat
    5.  3 slices bacon diced
    6.  salt/pepper to taste

    Cheats Cheese Sauce
    1.  3 eggs - medium
    2.  125 ml heavy cream
    3.  100 g shredded/grated cheese
    4.  2 tbsp mustard
    5.  2 gherkins/pickles sliced
    6.  salt/pepper to taste
    7.  50 g shredded/grated cheese to sprinkle over

    Instructions
    Beef Layer
    1.  Fry the bacon pieces until cooked then remove and set aside.
    2.  Fry the onion, garlic and beef until thoroughly cooked. Add salt and pepper to taste, stir through the cream cheese.
    3.  Pour the beef layer into the baking dish. Sprinkle the bacon pieces over.
    Cheats Cheese Sauce
    1.  Mix the eggs, cream, shredded/grated cheese, mustard, salt and pepper together. Pour the cheese sauce over the beef and bacon.
    2.  Place slices of gherkins/pickles all over the top then cover with the remanning shredded/grated cheese.
    3.       Bake at 180C/350F for 15 minutes until the cheese is golden and crispy. Serve with salad and 1 minute mayonnaise.

    Ingredients
    1.  1 Tbsp Cumin
    2.  ½ Tsp Chili Powder
    3.  ½ Tsp Paprika
    4.  ½ Tsp Onion Powder
    5.  ½ Tsp Garlic Power
    6.  ½ Tsp Salt
    7.  ½ Tsp Pepper
    8.  1½ Cup Shredded Cheddar Cheese, Divided
    9.  1¼ Cup Shredded Mozzarella Cheese
    10.     1 lb Ground Beef
    11.     ¼ Cup Minced Onion
    12.     ½ Cup Water
    13.     ⅛ Cup Pickled Jalapeños (Optional)
    14.     ½ Cup Enchiladas Sauce
    15.     ¼ Cup Sour Cream
    Instructions
    1. Brown the beef with the minced onion. In a cup mix the cumin, chilli powder, onion and garlic powder and salt and pepper with the water. Then pour over the browned ground beef. Let simmer for 5 – 10 minutes or until all the liquid is evaporated. Chop the add the pickled jalapeños. Mix until incorporated.
    2. In a large mixing bowl, mix 1¼ cup of the cheddar and all of the mozzarella cheese. Divide the cheese mixture into 6 then make balls. Place onto a parchment paper lined baking sheet. Bake @ 400 F for 6-8 minutes, or until the edges are golden brown.
    3. Let cool for 1- 2 minutes. Flip upside down, then place a few spoonfuls of the beef on the edge of each shell. Tightly roll each one into a cigar shape. (You need to do this quite quickly, before the cheese hardens)
    4. Turn your oven temperature down to 350 F. Place the cheesy beef rolls in a row on a small baking pan or dish. Then pour the enchiladas sauce evenly over them. Cover with remaining ¼ cup of cheddar cheese, then bake for 8 - 10 minutes of until the cheese on top is melted.
    5. Remove from the pan and serve with sour cream and chopped cilantro.

    Ingredients

    1.  1 Cup Cooked Chicken
    2.  ¼ Cup Bell Pepper
    3.  ¼ Cup Diced Tomato
    4.  ⅛ Cup Green Onion
    5.  1½ Cups Mozzarella Cheese
    6.  1½ Cups Cheddar Cheese
    Instructions
    1. Preheat oven to 400 F. Cover a pizza pan with Parchment Paper (NOT wax paper). Mix the Cheeses together, then evenly spread them over the parchment paper (in a circle shape). Bake the cheese shell for 5 minutes. Pour off any extra oil as soon as it comes out of the oven.
    2. Place the chicken over half of the cheese shell. Then add the sliced peppers, diced tomato and the chopped green onion. Fold the Cheese shell in half over the chicken and veggies. Press it firmly, then return it to the oven for another 4- 5 minutes.
    3. Serve with sour cream, salsa and guacamole. Garnish with Chopped Fresh Basil, Parsley or Cilantro.
    4. Note: To reheat, preheat oven to 400 F. Bake for 6-8 minutes (if cold).

    Baked Balsamic Chicken Recipe



    INGREDIENTS
    1.   1/2 cup balsamic vinegar
    2.   2 cloves garlic, minced
    3.   2 tsp dried oregano
    4.   1/4 tsp black pepper
    5.   1/4 tsp salt — or more to taste
    6.   4 boneless, skinless chicken breasts (6 oz each)
    7.   1/4 cup olive oil
    8.   2 tbsp soy sauce

    INSTRUCTIONS
    1.   If the chicken breast is too thick, you can pound it with a meat mallet until it is 1/2-inch thick.
    2.   Combine olive oil, balsamic vinegar, soy sauce, garlic, oregano and black pepper in a bowl.
    3.   Place chicken in a baking dish. Pour the marinade over it, making sure it is evenly coated. Let is sit for 10 minutes if you have the extra time.
    4.       Preheat oven to 400 F. Bake chicken at 400 F for 25 minutes, or until a thermometer inserted into the thickest part of the meat reads 165 F.

    Ingredients
    1.      2 Tablespoons melted coconut oil
    2.      2 Tablespoons maple syrup
    3.      1 teaspoon vanilla
    4.      1 cup almond flour
    5.      pinch of sea salt
    6.      about 7 teaspoons peanut butter
    7.      1 cup chocolate chips (I like EnjoyLife dark chocolate morsels or Lily’s Sweets stevia sweetened chocolate chips)
    8.      2 teaspoons coconut oil

    Instructions
    1.   Preheat oven to 350°F.
    2.   Add almond flour, coconut oil, maple syrup, vanilla and sea salt in a medium bowl. Scoop dough using a tablespoon and form into a round cookie shape, use your finger to create a small dent in the center of each cookie. Place cookies on a parchment lined baking sheet for 15-18 minutes, until cookies are slightly golden brown on the bottom. Let cool completely on the cookie sheet.
    3.   Once cookies have cooled, add 1/2-1 teaspoon of peanut butter into the dent of each cookie and spread it a little over the top. Place cookies in the fridge or freezer for about 15-30 minutes to let the peanut butter harden up a bit.
    4.   Melt chocolate chips and coconut oil in double boiler or in the microwave. For the microwave method, add chips and coconut oil to a microwave safe bowl and heat for 1 minute, stir and heat in 30 second increments until chocolate has melted.
    5.   The peanut butter should be chilled at this point so you can remove cookies from the fridge/freezer and dip each into the melted chocolate, one by one. Use a fork to dip and remove the cookie from the chocolate, making sure to let the excess chocolate drip off before transferring back to the baking sheet lined with parchment. Place chocolate covered cookies in the fridge or freezer for about 15-20 minutes to let chocolate set. Enjoy right away and store any leftovers in the fridge until ready to eat.

    Ingredients
    1.      1/3 cup shredded Parmesan cheese
    2.      1/2 cup breadcrumbs
    3.      1 small bell pepper finely diced
    4.      2 tbsp. mayonnaise
    5.      2 tbsp. Dijon mustard
    6.      15 oz. canned salmon large bones removed
    7.      2 eggs
    8.      2 tbsp. chopped scallion
    9.      salt to taste
    10.  olive oil or vegetable oil for frying

    Instructions
    1.      Place the salmon into a medium mixing bowl, and gently flake with a fork.
    2.      Add the rest of the ingredients and mix everything well.
    3.      Using a 1/2-cup as a measure, form small patties with your hands.*
    4.      IF FRYING: Heat oil in a large skillet over medium heat (use enough oil to generously cover the bottom of the skillet). Fry the patties for about 5 minutes on each side, until crispy and cooked through.
    5.      IF BAKING: Just drizzle some olive oil onto a large, non-stick cookie sheet, making sure that the surface is evenly covered. Arrange the salmon patties on the sheet and gently brush the tops with some oil. Bake at 425˚F for 15 minutes. Flip, and bake for an additional 5-7 minutes.

    *You’ll end up with 12 small patties. Nutrition information does not include the oil used for frying or baking the salmon patties.

    Ingredients
    1.      2 tablespoons coconut oil
    2.      1 tablespoon butter melted
    3.      1/4 tsp salt
    4.      1/2 cup almonds
    5.      1 bag Lily's Sugar-Free Chocolate Chips
    6.      1/3 cup natural peanut butter I use Smuckers
    7.      1/2 cup pecans
    8.      1/4 cup unsweetened coconut (optional if you'd like to add)

    Instructions
    1.      Preheat oven to 300 degrees.
    2.      Line a cookie sheet with parchment paper.
    3.      Spread pecans and almonds on parchment paper. (If almonds are already roasted there is no need to roast again.)
    4.      Drizzle 1 tablespoon melted butter and 1/4 teaspoon of salt on top of the nuts and toss to coat evenly.
    5.      Bake for 5 minutes, stirring once halfway through.
    6.      Remove from oven and set aside to cool.
    7.      Grease a glass bowl and add Lily's chips and coconut oil.
    8.      Microwave on high for 1 minute then stir.
    9.      Microwave in 15-second intervals, stirring between until Lily's chocolate chips are completely melted.
    10.  Add natural peanut butter and stir until it melts.
    11.  Pour melted chocolate mixture into an 11 X 7 baking pan covered with parchment paper.
    12.  Sprinkle pecans, almonds, and on top. (Feel free to customize toppings to your liking.)
    13.  Place baking pan in the refrigerator and allow to set.
    14.  Remove from refrigerator and break into bites.
    15.  Enjoy!

    Ingredients
    1.       2 cups tapioca starch
    2.       2 Tbs + 2 tsp xanthan gum
    3.       3 eggs, large
    4.       2 cups almond flour
    5.       1 tsp sea salt

    Instructions
    1.       Place the almond flour, tapioca starch and xantham gum in a bowl and whisk to combine.
    2.       In a bowl or large work area, mound two cups of the flour mixture and create a well in the middle.
    3.       Add the salt and crack the eggs into the well.
    4.       Using a fork or your fingers gently beat the eggs, slowly incorporating flour into the eggs until all of it is combined or until the dough can be kneaded by hand.
    5.       Knead dough until it is smooth and elastic. The dough should be pliable but not too sticky. If dough is sticky, add flour a little at a time, kneading until smooth.
    6.       Roll the dough into a ball, wrap in plastic wrap and allow to rest for about 30 minutes.
    7.       Divide the dough into four equal pieces and use your hands to shape each piece into a rectangle about a quarter of an inch thick.
    8.       Send the first piece through the pasta roller at setting 1.
    9.       Fold the piece in half and send through again. Repeat one or two more times until the dough feeds through smoothly, dusting with tapioca starch to keep it from sticking.
    10.   Change to setting 2 and feed the dough through. Repeat until you get to your desired thinness (I like setting 3, some prefer setting 4). As you go, dust the pasta sheets with a bit of the flour mixture or tapioca starch to keep the sheets from sticking.
    11.   Repeat for each of the remaining three pieces of dough.
    12.   Switch to a pasta cutter and feed each piece through or slice each sheet into pasta strands with a knife.
    13.   Bring a large pot of salted water to a rolling boil.
    14.   Drop in pasta strands and cook for 60 seconds while stirring.
    15.   Remove pasta from water and toss with olive oil.
    16.   Serve with sauce or toppings of choice.
