    INSTRUCTIONS
    APPLE CAKE

    1. Preheat oven to 350° degrees F. Prepare two 8-inch round cake pans with either baking spray or line with parchment.
    2. Mix brown sugar and cinnamon together in a bowl. Set aside.
    3. Beat butter and sugar together in a bowl of stand mixer fitted with paddle attachment until smooth and creamy. (1-2 minutes) Beat in eggs, 1 at a time, until incorporated.
    4. Add vanilla extract. Once incorporated remove bowl from mixer.
    5. Sift flour and baking powder together in a bowl then stir into creamed butter mixture by hand. Mix milk into batter until smooth.
    6. You should have about 6 cups of batter. Pour 1 1/2 cups of the batter (or 1/4 of your total batter) into one of the prepared cake pans; add 1/4 of the apples and 1/4 of the brown sugar mixture. Lightly pat apple mixture into batter. Gently pour another 1 1/2 cups of batter over apple layer; top with another 1/4 of the apples and brown sugar mixture. Lightly pat apples into batter.
    7. Repeat this with remaining batter and brown sugar/apple mixture in other cake pan.
    8. Bake in the preheated 350°F oven until a toothpick inserted in the center of the cake comes out MOSTLY clean, 25 to 35 minutes. (Do NOT overbake! Cake is done when the edges are golden brown and the cake has just slightly pulled away from the sides of the pan)
    9. When ready to assemble cake prepare Cinnamon Buttercream.

    CINNAMON BUTTERCREAM

    1. Add butter, vanilla, cinnamon, confectioners sugar and 1 tablespoon in heavy cream to stand mixer fitted with paddle attachment. (You can also use a hand held mixer.)
    2. Turn mixer on slow to incorporate all ingredients. If frosting seems too thick add remaining heavy cream. Turn mixer on high and mix for 1-2 minutes or until frosting is lighter and fluffier. (You want frosting to be a spreadable consistency.)

    RECIPE NOTES
    Assembling Cake:

    1. Place the first layer of cake on cake stand. Drizzle with up to 3 tablespoons of caramel. (Allow to soak in, about 1-2 minutes)
    2. Cover with all of your cinnamon frosting. (Should be about 1 cup. This is a naked cake so feel free to push the frosting all the way to the edge so that it is visible when you place the next layer on top.)
    3. Place the other layer of cake on top and drizzle with caramel. Allow caramel to spill over the sides if you would like. Cake should be served immediately. Serve extra caramel with each slice.
    4. Refrigerate covered for up to 3 days.

    Instructions

    1. Preheat oven to 350 degrees F. Grease a 9 x 13 inch pan.
    2. Mix all ingredients except chocolate chips well. Then gently fold in chips.
    3. I always use a 9 x 13 pan, by 2 - 9 inch round pans can also be used.  Bake for 30 - 40 minutes until a toothpick inserted in the center comes out clean.

    Recipe Notes

    1. Mix ingredients very well before adding chocolate chips
    2. Be careful not to add liquids to pudding mix only as it can begin to set up like pudding
    3. The pudding makes this cake so moist, but it also means the cake takes longer than normal to bake
    4. Baking times vary, so I use a toothpick to test the cake a couple times to prevent burning
    5. Cake can be made in two 9 inch pans or in a 9 x 13-inch pan
    6. I always use store bought icing to save time, but feel free to make homemade icing

    Best Ever Frozen Frappuccino Pie

    INSTRUCTIONS

    1. Make the base: place the biscuits in a food processor and blitz until a fine crumb, then, with the blade running, pour the melted butter onto the biscuit crumbs. When combined, pour the crumb into a 20cm springform tin and using your hands, or a glass, push the crumb into the base and sides of the tin. Place into the fridge for at least 30 minutes.
    2. Make the filling: Place the cream into a large bowl and add the sugar and coffee powder, then whisk until stiff peaks form. Add the caramel and fold in until well combined then spoon into the base, smoothing the top with the back of a spoon or an offset spatula. Place into the freezer for at least 4 hours.
    3. You will need to remove the pie from the freezer 20 minutes before serving, which will giv you time to make the meringue.
    4. Make the topping: in a small saucepan set over high heat, stir together 300g of the caster sugar, cream of tartar and water. Bring to a boil and without stirring, bring the mixture to 120 C on a sugar thermometer.
    5. Meanwhile, place the egg whites in the bowl of a stand mixer fitted with the whisk attachment. Beat until medium peaks form then gradually add in remaining 100g caster sugar. Once combined, very carefully pour the hot sugar syrup into the mixture, making sure not to pour the syrup over the whisk. Whisk for 5 to 10 minutes until the bowl of the mixer has cooled to the touch and the meringue is thick and glossy then add the vanilla and whisk for a further minute..
    6. Assemble the tart: Remove the pie from it’s tin and spoon the meringue mixture on top of the pie. Use a blowtorch to lightly toast the marshmallow topping before serving. Slice with a hot knife.

    6. Directions for Caramel Drizzle
    7. In a medium saucepan, combine condensed milk and brown sugar; bring to a boil over medium-high heat, whisking frequently. Reduce heat, and SIMMER for 8 minutes, whisking frequently.
    8. Remove from heat; whisk in butter and vanilla. Let cool for 5 minutes before using.

NOTE: Make sure you drizzle the caramel while it’s still HOT. When cooled the caramel does somewhat harden.
NOTE: Fill pan as you would any other cake leaving room for it to rise, you may have some batter left over.
NOTE: I have had comments that the toffee bits tend to sink and may cause the cake to stick to the pan. It has been suggested that you dust the toffee bits with flour and grease pan with Crisco not a cooking spray.

    Salted Caramel Chocolate Cake

For the salted caramel chocolate frosting:

    1. 2 cups unsalted butter (4 sticks, 16 ounces), VERY soft
    2. 4 and 1/2 cups confectioners' sugar, sifted
    3. 3/4 cup unsweetened cocoa powder, sifted
    4. 1 teaspoon vanilla extract
    5. 1/2 teaspoon salt
    6. 3 tablespoons heavy cream (more if needed)
    7. 2 tablespoons salted caramel sauce
    8. Garnish:
    9. 1 and 1/4 cups salted caramel sauce
    10. Flaky sea salt

    Instructions
    For the chocolate cake:

    1. Preheat oven to 350°(F). Cut out three 9-inch round segments of parchment paper to line your cake pans with. Spray each pan generously - sides and bottom - with nonstick cooking spray, then place the parchment paper cut out in the bottom of the pans and spray again. It's important to make sure every bit of pan and paper are sprayed so your cakes don't get stuck. Set pans aside.
    2. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, combine both sugars, flour, cocoa powder, baking soda, baking powder and salt; mix on low until dry ingredients are thoroughly combined. Use your hands to break up any large clumps, if needed.
    3. In a separate bowl combine the eggs, egg yolks, sour cream, milk, oil and vanilla extract; mix until completely combined. Pour mixture into the dry ingredients and beat on low until just incorporated. Pour in hot water and continue mixing until completely combined; about 1 minute. The batter will quite thin.
    4. Divide batter evenly among prepared pans. Bake in preheated oven for 30 minutes, or until a wooden toothpick or cake tester inserted in the center of a cake comes out clean or with just a few moist crumbs attached. Cool cakes for 10 minutes in the pan before removing from pans and transferring to a cooling rack; cool cakes completely before frosting.

    For the chocolate frosting:

    1. In a stand mixer fitted with the paddle attachment, cream the softened butter on medium-speed until completely smooth; about 3 minutes.
    2. Turn the mixer off and sift the powdered sugar and cocoa into the mixing bowl. Turn the mixer on the lowest speed and mix until the sugar/cocoa have been absorbed by the butter; about 2 minutes. Increase mixer speed to medium; add in vanilla extract, salt, heavy cream and salted caramel; beat for 3 minutes. If your frosting appears a little too thin, add a little more confectioners' sugar; If your frosting needs to be thinner, add additional heavy cream, 1 tablespoon at a time.

    Assembly:

    1. Using a serrated knife, carefully trim the raised top of each cake, making each one an even, level surface. Transfer 1 layer to a large plate or cake stand. Spread a thin layer of frosting on top, then add a 1/2 cup of caramel; top with another cake layer, and repeat, thinly spread it with a layer of frosting, then adding a 1/2 cup of caramel. Top final cake layer and place cake in the fridge to set for 1 hour. Once set, finishing frosting the top and sides of the cake. Sprinkle with sea salt. Slice and serve, or keep refrigerated for up to 5 days.

    Notes
Cake may be baked up to 5 days in advance and stored in the fridge. Unfrosted cakes may be wrapped and frozen for up to 2 months. For best results, follow the recipe as written.
